Zucchini Boats
Ingredients:
Fresh Zucchini
Spaghetti Sauce
Cauliflower Rice
Corn (1 can drained)
Garlic
Salt/Pepper
Shredded Cheese (your choice of flavor)
Directions
Preheat oven to 350
Cut Zucchini long ways down the middle
Clean the inside seeds out of the zucchini
Add a little butter to the inside of the zucchini (it keeps it moist)
Cook zucchini for about 35 minutes (keep checking it, cook until its soft)
While the zucchini is cooking, cook the cauliflower rice (I like the steam in the bag)
Add the cauliflower rice to a skillet on medium heat
Add Marinara Sauce
Add Canned Corn
Add Garlic (to taste0
Add Salt/Pepper (to taste)
Mix these ingredients and keep on warm while the zucchini finishes cooking
Once zucchini is done remove from oven
Add the mixture from the skillet into each “boat”
Sprinkle shredded cheese on top
Pop back into the oven until the cheese is melted and bubbly
*You can also use spaghetti squash to fill the “boats” lots of times I have spaghetti squash one night and use the leftovers to fill the “boats” the next day*
Add whatever veggies and seasonings you like!

You can add meat to these also, we do not eat red meat but I have done it with shredded chicken-YUMMY!
