Stuffed Peppers
Ingredients
Peppers (you can use any color you like)
Cauliflower Rice
Spaghetti Sauce (your preferred brand or home made)
Mixed Veggies (I use frozen, if your fancy use fresh)
Cheese (whatever kind you like, I use finely shredded cheddar)
Salt, pepper, any seasonings you like
Directions
You will want to preheat oven to 350
Boil peppers until soft, typically I boil on medium for about 15 minutes
While the peppers are boiling, cook cauliflower rice (I use frozen) and veggies (again, I use frozen)
Once the rice and veggies are done, mix them in a bowl
Pour spaghetti sauce over the rice and veggie mixture, mix well, add salt/pepper, seasonings (I use Garlic Salt, onion powder, garlic powder)
Arrange peppers in a baking dish (you can also use a baking sheet)
Spoon the rice and veggie mixture into the peppers
Top with cheese
Put in the oven to bake until cheese is bubbling (about 15 minutes)
Easy and delicious! Now, of course you can add meat if you wish, hamburger, turkey, chicken, whatever you like!
