Veggie Bowls
Ingredients
Broccoli
Carrots
Cauliflower
Corn
Black Beans
Rotel
Chips
Directions
Preheat oven to 350
Steam Broccoli and Cauliflower (I use steam in bag)
Cook carrots (I use steam in bag)
Cook corn and DRAINED black beans on medium heat
After all of these are cooked, mix them in a bowl, add a can of Rotel, mix well
Place in the oven for everything to cook together and get warm, about 15-20 minutes
I eat with chips (kind of like a dip but more filling)
Sprinkle with salt, pepper, any other seasonings you like
You can top with salsa if you like (the Rotel is enough for me)
You can also add meat to this if you wish, we just eat as a veggie bowl, you can also add sour cream or other toppings if you prefer
