Mexican Stuffed Peppers
I must add this is actually Mikes recipe that he made up! Stay with me on this one..
Green Bell Peppers (you could use any color, we used green)
Mexican Rice (we use Knorr)
Re-fried Beans
Whole Kernel Corn
Velveeta Cheese
Sour Cream
Salsa
Directions
Clean the insides of the peppers
Boil the peppers on the stove over medium heat (until soft)
While the peppers are boiling, cook your rice, beans and corn
Once the peppers are done, take them out and place in a baking dish
Layer first with rice, then Velveeta
Layer second with beans, then Velveeta
Layer third with Corn, then Velveeta
You can layer a second time if you want (we did)
For the Velveeta, we did this last, we cubed it and placed it in a saucepan, added a little milk and stirred
We put all the cooked items, rice, beans and corn in separate bowls to make it easier for layering
We added sour cream and salsa..
You could do Rotel in your Velveeta, add spinach, endless possibilities!
